Ingredients
Butternut Squash Soup
- 1 lb conchiglie pasta (or any shell like pasta, cavatappi pasta would be my next pick)
- 15 cremini mushrooms
- 1 lb spicy italian sausage
- 2 shallots
- 3 cloves of garlic
- 1 sprig of thyme
- 2 cups of pasta water
- 2 cups of heavy cream
- 1.5 cups of finely shredded parmesan (I use Krafts finely shredded)
- Salt to taste
Instructions
- Wash and mince all produce. You want everything to be finely chopped.
- Bring a large pot of water to boil. Salt generously. While you wait for the water to boil bring a large sauce pan to medium heat.
- Add your pasta to the large pot, and cook al dente. Reserve two cups of pasta water.
- While that cooks, you can brown and break down your sausage in the sauce pan.
- Strain the pasta, and set aside.
- Remove the sausage, from the saucepan. If excess grease, remove that as well.
- Into the same saucepan add your mushroom. Add a small pinch of salt, and cook down until excess liquid has evaporated. 5-10 minutes.
- Add your thyme, shallot, and garlic. Add another small pinch of salt. Cook an additional 5 minutes.
- Add in a splash of your reserved pasta water, with a spatula remove the fond from the bottom of the pan. Then add in the rest of your pasta water, and heavy cream.
- Bring to a simmer, and add in your pasta. Stir around continuously keeping the pasta from sticking to the bottom of the pan.
- Once the sauce has thickened, cut the heat. Keep stirring the pasta for 3 minutes. Add your parmesan slowly. Stirring after each addition.
- Once the parmesan is completely incorporated, add in your sausage. Fully incorporate that as well.
- Top with additional parmesan while serving!
- Enjoy!
