Ingredients
- 4lbs chuck roast
- 3 oranges
- 4 limes
- 1/2 tsp cumin
- 3 tbsp chopped garlic 8-10 cloves)
- 1/3 onion chopped
- 1 tbsp salt
- 1/2 tsp pepper
- 3 sprigs of thyme
- 1 sprig of rosemary
- 6 sprigs of oregano
- 2 bay leaves
- 1 bottle of Mexican coke
Instructions
- Set your oven to 300 degrees Fahrenheit.
- In a small bowl, pour the juice all your oranges and limes. Add your garlic, onion, pepper, salt and cumin as well. Set aside.
- Cut your chuck roast into 4 pieces. Salt on all sides. Then at medium high heat in a Dutch oven, drizzle some oil and sear your meat. Work in batches to get good color. Set aside
- Turn the heat off for your Dutch oven, and then add back in your meat. Add your orange and lime juice with all its accompaniments. Add your Coke, and lastly add your sprigs of herbs and bay leaves. I tie my sprigs with butchers twine for easier removal later!
- Make sure your herbs are submerged in the liquid so they don’t burn.
- Put the lid back on your Dutch oven, and place in oven. Cook for 3-4 hours, checking at hour 3 for doneness and every 30-40 minutes after if not done.
- Once meat is done (it should shred easily and be juicy) shred and place on a cooking sheet.
- Set oven to broil.
- With a ladle, ladle on juice from Dutch oven onto the meat. About 2 cups. Mix around well and place in oven. Let brown over the top.
- Once browned your meat is finished!
- Enjoy on tacos, burritos, quesadillas, and anything else you see fit!
