Ingredients
- Buttermilk Marinade
- 1.5 pounds of chicken tenderloins
- 2.5 cups of buttermilk
- 1.5 tbsp hot sauce (Louisiana hot sauce is my favorite for this)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and Pepper to taste
- Dry Batter
- 1 cup flour
- 1/2 cup cornstarch
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
- Cajun Ranch
- 1 cup buttermilk
- 1/2 cup mayonnaise
- 1 hidden valley restaurant style ranch packet
- 1/2 tsp Tony’s seasoning
Instructions
- Mix all ingredients for buttermilk marinade, and then add chicken. For best results let marinate for 3-6 hours.
- In a small bowl add your buttermilk, and mayonnaise for you ranch. Mix well, then add your hidden valley ranch packet, and mix again. Then add half of Tony’s seasoning, taste, and if desired add the rest.
- In a small baking dish mix up your dry batter. Begin coating your chicken in the batters. You’ll do this by taking one chicken out of the buttermilk batter and let the excess drippings fall into the bowl, then coat the chicken in the dry batter, then repeat by placing the chicken back into the buttermilk bowl, and over again into the flour. Do this to each tenderloin.
- Let the battered chicken rest for 15 min before frying. While you’re waiting warm up your oil on medium heat.
- Once oil is hot and chicken has rested, test the oil to make sure it is not too hot or too cold. You’ll do this by pinching off a small piece of batter from your chicken and throwing it into the oil. If it sinks and barely sizzles, it’s too cold. If it sizzles and burns (turns black) right away it is too hot. You want it to sizzle and turn brown.
- Begin frying in small batches. If you overcrowd the pot you’ll end up with soggy chicken. I fry 2 at a time in a medium size pot.
- Once golden brown place on a cooling rack, and let chicken rest for 5 minutes.
- Serve with Cajun ranch, slaw, fries, or whatever else you want!
- Enjoy!
