Smokey green chile breakfast sammie
Fresh english muffin, with egg, bacon, avocado, melty american cheese, and a surprising sauce that brings it all together.

This is an easy elevated breakfast sandwich. I made these on fresh sourdough english muffins (highly recommend taking the time to do this). The fluffy muffin for this sandwich works so well, and helps it become a filling breakfast — not a heavy one.
Ingredients
Sandwiches
- 4 English muffins
- 4 eggs
- 4 strips of thick cut bacon
- 4 slices of American cheese
- 1 avocado (halved and sliced)
Smokey green chile sauce
- 2 tbsp green chilies
- 1 tsp chipotle
- 2 tbsp mayonnaise
Instructions
- Cook you bacon to your desired crispiness. I place my bacon on a baking sheet, and place in a cold oven, then turn the oven on 385 degrees fahrenheit, and wait until crispy. About 10-15 min.
- While bacon is cooking, heat up your pan on medium – high. Cook your eggs by cracking them directly into the pan. Once in the pan, crack the yoke (unless you want it runny), and then flip once underside it cooked. While you’re cooking the last side of your egg, place american cheese on top of egg to melt in the pan.
- In a small bowl, add all your ingredients for your green chili sauce. Mix well and set aside.
- Once eggs are done, keep your pan on. Slice your english muffins in half (sandwich style of course), and butter the inside. Place in pan until golden and crispy on the inside.
- Set up your sandwich station! You should have your bacon, eggs with cheese, sauce, and sliced avocado. Assemble by first spreading sauce on one slice of english muffin, then on the other slice placing your 1 egg and cheese, 1 slice of bacon, and 1/4 of sliced avocado. Stack those on top of each other, and there you have it!
- Enjoy!

Tips & Notes
- There are no rules to this, you can decide how you want to make this sandwich! I suggest if you like a lot of sauce, to double the sauce portion of this recipe.
