Meat Grinder Grillo Pickle Sandwiches

Meat Grinder Grillo Pickle Sandwiches

The best pull apart sandwiches to share with friends!

I love making these sandwiches! Actually I just love sandwiches. Once you start making loaded sandwiches, you will understand what’s so great about them. I started making these over a year ago, and now we are getting to try different varieties of the original. This is a grillos pickle version. I love grillos pickles, they are actually one of the best pickles. Not too salty, not soggy, instead they have an insane crunch, and the brine is perfect. Why not highlight that on a sandwich? Anyways this is an easy peasy recipe, and you will not be disappointed by the results!

Time: 15 minutes

Serves: 24 mini hearty sandwiches

Difficulty: Easy

Ingredients

  • 24 c hawaiian rolls
  • 16 oz Deli Turkey
  • 8 oz Salami
  • 6 slices Colby Jack Cheese
  • 1/4 thinly sliced red onion
  • 1.5 cups shredded Lettuce
  • 4-6 Pepperchinis
  • 5-7 Grillos Pickles
  • 1 TBSP pickle juice
  • 1/3 cup Mayonaise
  • 1/2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Slice rolls in half, set aside top half.
  2. Place turkey, salami, and cheese evenly across rolls
  3. On a low broil, place both bottom and top parts of rolls into the oven. Broil under cheese gets bubbly and rolls are browned and toasted.
  4. In a medium bowl place all cut up veggies. Add in mayo, pickle juice, and Italian seasoning.
  5. Mix thoroughly, and taste for salt and pepper.
  6. Right before serving, place lettuce mixture on the bottom part of the rolls where your cheese and meats are. Spread evenly across.
  7. Slice rolls into individuals so they are easier so handle.
  8. Enjoy!

Tips & Notes

  • Don’t add the lettuce mixture until right about to serve. It can possibly make your sandwiches soggy, which is the worst thing that can happen!
  • Feel free to add whatever toppings you would like, a sandwich is customizable!
